I cooked this last night. It's an easy, great tasting recipe for a dinner party.
Tequila Prawns Brasilia Cubano
Ok, I added the "Brasilia Cubano" part. It's Key West Prawns (you can buy them frozen by the pound at QFC), served over Valencia long grain rice (cooked in chicken broth) with cilantro, garlic and tequila. I added long sliced sweet peppers, cubed ham, peppered panceta, chipoltle and cyanne pepper for that South American-Cuban feel. If you really want to grub, throw some chicken into the mix. Tellin' ya, seafood, chicken and the hog together...just does it for me.
Oh, and save a little tequila for yourself. Don't forget the lime.
